Sous Chef R&D

About the Role

The Sous Chef R&D works with R&D Chefs to research new food products and assist in implementing themed culinary concepts throughout Universal's resort and UDX. You'll formulate and test new products, research suppliers, and help implement full life cycle projects from staffing and training through grand opening.

What You'll Do

• Plan and design new culinary concepts with R&D Chefs to meet Universal specifications
• Develop menu food items, plate presentations, and recipes including marquee events
• Research food product and market trends to develop new menu concepts
• Review facility design drawings and Operational Training Materials
• Ensure menu items are set up correctly in Eatec and prepared per recipe
• Attend design reviews with F&B designers and engineers
• Partner with Talent Development to train staff on new food and beverage offerings
• Ensure quality, safety, and HACCP standards are maintained

Required Qualifications

• Associate's degree or equivalent preferred
• 2+ years experience as a Sous Chef R&D or restaurant Chef
• Certified Professional Food Manager Certification required
• Culinary arts certificate or degree preferred
• Exceptional culinary skills; strong understanding of flavors, textures, and upscale casual trends
• Knowledge of food product development science and sensory evaluation

Preferred Qualifications

• Certified Executive Chef (CEC) designation
• Experience in theme parks, entertainment venues, multi-unit restaurants, hotels, or resorts

Schedule & Pay

On-site, full-time. Salary range: $70,304–$75,000/yr (bonus eligible). Benefits include medical, dental, vision, 401(k), paid leave, and tuition reimbursement.
